Our Story

Once upon a time, a couple of gin lovers set up home in an old fishing port turned vibrant seaside town nestled on the coast just below Barcelona. They started turning their hand to distilling the many herbs that they found on their doorstep in the Garraf Natural Park, wanting to channel their passion for gin into a handcrafted spirit which reflected the flavors and ambience of their adopted hometown. After developing 55 recipes they hit on the winning formula: an aromatic blend of 14 botanicals including the locally found rosemary, lavender, honey, sea salt and thyme which mixed effortlessly with juniper, kaffir lime leaves and cardamom amongst others.

"Why the peacock?" you may well wonder. It was inspired by a sculpture on the walls of the Palau Maricel in Sitges (1918). This magnificent bird already held a place in their heart ever since a special encounter in Kew Gardens the very day before the birth of their first daughter many years ago. In a moment of instant recognition they knew that they had found the perfect symbol for their Sitges-inspired gin - this town which attracts people from all walks of life and all persuasions and encourages them to be themselves and show their best colors was as much of a peacock as any town could be. And the moral of the La Fontaine story which inspired this particular sculpture was just that: be yourself, no matter what they say.

The Perfect Paó & Tonic

In our quest for the perfect G&T, we spent an entire year meticulously experimenting with oodles of different botanicals until we were satisfied that we had finally hit upon our perfect gin!

Thus, we believe that the actual serving of a Paó & tonic is surely worthy of a moment of your attention.

  • The Trick to Serving
  • We prefer a balloon glass with a stem, chilled is even better
  • Add 4 extra large ice cubes (Spanish style, to avoid dilution)
  • Fill the large end of your jigger with 50 ml of Paó Gin
  • Pour over the ice
  • Em’s Perfect Serve / Garnish
  • Use a peeler to peel a long ribbon of lemon skin
  • By hand, twist the lemon skin over the cubes of ice, fragrantly releasing the lemon oils over your drink
  • Rub the lemon zest around the rim and finish by tossing it into the glass
  • Gently pour over 200ml of premium Indian tonic
  • Take a long spoon and gently stir once
  • Ed’s Perfect Serve / Garnish
  • Cut half a slice of pink grapefruit
  • Pop into the balloon glass on top of the ice
  • Gently pour over 200ml of premium Indian tonic
  • Take a long spoon and gently stir once
  • Break off a small sprig of rosemary and place into your drink

Breathe in nature’s abundance before tasting (quite possibly) the most delicious G&T of your life!

The HQ of Paó Gin is situated In the historic heart of Sitges (Spain) at our gin concept store and workshop space in Carrer Major 15. Our adopted home is a free-spirited and vibrant Mediterranean seaside town. Be it the month long carnival in spring, the International Film Festival in October with its world premieres and red carpet events, its much celebrated Gay Pride or the endless parties and concerts during the summer when Sitges becomes a mecca for the party crowd, this is a place that knows how to let its hair down, or indeed how to raise its feathers up and our gin has become a must-sip drink at the many events and gatherings throughout the year.

We regularly host cocktail making sessions, can teach you how gin is made using our 2,5 litre copper stills and have a variety of team building ideas for groups and company events (all naturally involving gin!).

The 90m2 space is also available for private events, parties and workshops.
